Sweet Potato Thai Curry Bowls

Ingredients
  

  • 3-4 garlic cloves minced
  • 2 tbsp ginger minced
  • 2 tbsp olive oil
  • 2 tbsp green curry paste
  • ½ cup broth (or water)
  • 1 13.5 oz can coconut milk
  • 1 13.5 oz can chickpeas, drained
  • 2 sweet potatoes cubed
  • salt and pepper to taste

Method
 

  1. Heat a pan over medium heat. Sauté garlic and ginger in olive oil until soft, about 2-3 minutes.
  2. Pour in curry paste, broth, and coconut milk and stir until combined.
  3. Add chickpeas, sweet potatoes, and a dash of salt and pepper. Bring to a boil. Cover and reduce the heat to a simmer, cooking 20-25 minutes or until the sweet potatoes are soft.
  4. Serve with yogurt and fresh cilantro and enjoy!
