Method
- Preheat the waffle iron to a medium heat.
- In a large bowl, combine the egg, milk, oil, and vanilla extract. Whisk thoroughly and set aside.
- In a separate bowl, combine the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Stir well.
- Pour the dry ingredients into the wet ingredients and mix well. Stir in the shredded apple and mix until just combined.
- Spray the waffle iron with a cooking spray. Carefully pour the batter into the waffle iron and be careful not to overfill. Cook until golden brown and repeat until all the batter has been used.
- Serve the apple fritter waffles warm with glaze and maple syrup.

- While the waffles are cooking, thoroughly whisk powdered sugar, milk and vanilla extract.
