Ingredients
  

  • 1 egg
  • ½ cup milk
  • 1 tbsp cooking oil
  • ¼ tsp vanilla extract
  • 1 cup flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup shredded apple
Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ¼ tsp vanilla extract

Method
 

  1. Preheat the waffle iron to a medium heat.
  2. In a large bowl, combine the egg, milk, oil, and vanilla extract. Whisk thoroughly and set aside.
  3. In a separate bowl, combine the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Stir well.
  4. Pour the dry ingredients into the wet ingredients and mix well. Stir in the shredded apple and mix until just combined.
  5. Spray the waffle iron with a cooking spray. Carefully pour the batter into the waffle iron and be careful not to overfill. Cook until golden brown and repeat until all the batter has been used.
  6. Serve the apple fritter waffles warm with glaze and maple syrup.
Glaze
  1. While the waffles are cooking, thoroughly whisk powdered sugar, milk and vanilla extract.
